Crispy Czech Potato Pancakes (Bramborák)
This is one of those simple, comforting recipes that taste like home — golden, crispy potato pancakes called Bramborák in Czech. They’re made with just a few humble ingredients: potatoes, flour, eggs, and a hint of garlic and marjoram. Perfect for a cozy lunch or light dinner, served with a dollop of sour cream and fresh parsley.
🥔 Ingredients
6 potatoes (about 100 g each)
1 dl (about ½ cup) all-purpose flour
2 eggs
1 garlic clove, pressed
1 teaspoon marjoram
1 teaspoon salt
A pinch of black pepper
Oil for frying
To serve:
Sour cream or crème fraîche
Chopped fresh parsley
Extra black pepper
👩🍳 Instructions
Grate the potatoes finely — no need to peel them unless you prefer.
Squeeze out as much liquid as possible and place the grated potatoes in a bowl.
Add the flour, eggs, garlic, marjoram, salt, and pepper, and mix everything into a thick batter.
Heat plenty of oil in a frying pan and spoon small portions of the batter into the pan.
Fry for about 2 minutes per side until the pancakes are golden and crisp.
Place on paper towels to absorb excess oil.

Top your Bramborák with a spoonful of sour cream or crème fraîche, sprinkle with fresh parsley and black pepper — and enjoy while still warm.

These are best eaten right away, but you can keep leftovers in the fridge and reheat them in a hot pan or oven to make them crispy again.
