Thin Swedish Pancakes
Thin Swedish Pancakes with Blueberry Jam and Whipped Cream
There is something very comforting about a plate of thin Swedish pancakes, served warm with blueberry jam and a spoonful of lightly whipped cream. This simple dish is a classic in many Swedish homes — often enjoyed for breakfast, lunch, or even as a cozy evening treat.
Unlike American pancakes, Swedish pancakes are thinner, softer, and closer to crêpes — but with their own Scandinavian character. They are quick to make, use everyday ingredients, and pair beautifully with the sweetness of jam and the lightness of cream.
🌿 Ingredients (for about 2 servings)
2 eggs
2 dl milk
1 1/4 dl flour
A pinch of salt
Butter (for frying)
Blueberry jam (homemade or store-bought)
Whipped cream
🥣 Instructions
In a bowl, whisk together the eggs and half of the milk.
Add the flour gradually, whisking until smooth.
Pour in the rest of the milk and a pinch of salt. Mix until the batter is thin and lump-free.
Heat a frying pan over medium heat and melt a little butter.
Pour a small amount of batter into the pan, tilting it so the batter spreads into a thin, even layer.
Fry until the pancake is golden underneath, then flip and cook the other side briefly.
Repeat with the rest of the batter, adding a little butter to the pan as needed.
Serve the pancakes warm, rolled or folded, with a spoonful of blueberry jam and a dollop of whipped cream.
🍽 Cozy Serving Tips
Use mismatched thrifted plates or vintage cups to make your pancake moment feel extra special.
Try different jams: lingonberry is another very Swedish option, while raspberry adds a summery touch.
For a lighter version, top with fresh berries and Greek yogurt instead of cream.
Swedish pancakes are more than food — they are a tradition of simple comfort, enjoyed around kitchen tables across the country. Whether you make them for a Sunday brunch or a quiet evening snack, they are sure to bring a smile.
