Chickpea & Veggiestew


 

🥘 Chickpea & Veggie Stew (1 pot, 30 min)

Ingredients (basic pantry style):

  • 1 can (or 250g cooked) chickpeas

  • 1 onion, chopped

  • 2 carrots, sliced

  • 2–3 garlic cloves, minced

  • 1 can chopped tomatoes (or 3–4 fresh)

  • A handful of leafy greens (kale, spinach, or cabbage)

  • Olive oil

  • Oregano, thyme, or rosemary (dried herbs work fine)

  • Salt & pepper

Optional add-ins:

  • A small potato (cubed) for extra heartiness

  • Lemon juice before serving

How to make:

  1. In a pot, sauté onion, garlic, and carrot in olive oil until soft.

  2. Add chickpeas, tomatoes, herbs, salt, and pepper.

  3. Simmer 20 minutes (add water if you want it soupy).

  4. Stir in greens at the end, cook 2–3 minutes.

  5. Drizzle with olive oil + a squeeze of lemon before serving.

💡 Serve with:

  • A slice of whole grain or sourdough bread

  • Or a small side of cooked barley/bulgur
